    Recipe for quinotto with mushrooms

    Have you tried quinotto yet? It's a variation of risotto where the rice has been replaced by quinoa! Apart from being packed with nutrients, it's also easy to prepare - it only takes 20 minutes.

    Recipe for Quinotto with mushrooms

    For 2 persons
    Cooking time: about 20 min

    Ingredients
    3 dl quinoa
    5 dl of water
    1 chicken or vegetable stock cube
    1 yellow onion
    250 grams of mushrooms
    1 dl cooking cream/vegetable cream
    1 dl grated parmesan
    Olive oil and butter
    Salt, pepper
    Possibly some truffle oil.

    Do this:
    1. Heat some olive oil in a small saucepan. When the oil is hot, add the quinoa and stir over a high heat for 1 minute. Pour the water into the pan with the quinoa and add the stock cube. Cook, covered, over medium heat for about 20 minutes.

    2. Chop the onion and cut the mushrooms into cubes. Fry the onion in a large frying pan over medium heat in a little olive oil for about 4 minutes. Remove the onion from the heat and set it aside on a plate.
    3. Fry the mushrooms in the same pan you used for the onions. Fry over high heat until all the liquid disappears (about 3 minutes). Add olive oil and fry until the mushrooms are golden brown, about 5 minutes.
    4. Add the onion, quinoa and cream to the skillet with the mushrooms. Salt and pepper to taste. Mix to combine.
    5. Top the quinotto with grated Parmesan, flaky salt and black pepper.
    6. tip! Personally, I love to top with some truffle oil and/or some good olive oil

    Three healthy ingredients for pregnant women:

    Quinoa is a seed and is full of protein, fiber and iron. It contains calcium and magnesium, among other nutrients, which are important during pregnancy. If you're a vegetarian, quinoa is a great way to get protein.

    Parmesan cheese is a cheese that is allowed to be eaten during pregnancy. Parmesan is a good ingredient for getting the calcium needed for the baby's growth and bone development.

    Mushrooms are full of vitamins and fiber that help with constipation that often occurs during pregnancy. Mushrooms also contain iron.
