    Diana's recipe: avocado pesto

    Pesto är en riktig klassiker som alltid fungerar och just denna pesto gjord utav avokado är ett recept som vi älskar. Rätten är gjord av Diana Gran, en matälskande hemmakock som kom fyra i Sveriges Mästerkock 2021. Avokadopeston serveras tillsammans med kyckling, vita bönor och ärtor – tillsammans utgör de en hälsosam och mättande måltid som är perfekt för gravida.

    Om du inte har tid att göra egen pesto är det okej att köpa färdig och mixa med en mogen avokado. Så gör Diana själv när hon inte orkar (vilket kan bli ofta).. och det blir precis lika gott! Peston blir extra krämig, nästan gräddig, med avokado i.

    Recept på avokadopesto med kyckling

    För två personer
    Tillagningstid: ca 20 min

    Ingredients:
    250 g stora vita bönor på burk (ha mer bönor om du är hungrig)
    2 dl frysta gröna ärtor
    2 kycklingfiléer

    Ingredienser till avokadopesto:
    1 mogen avokado
    1 knippe basilika
    1 vitlöksklyfta
    1 dl god olivolja
    1 dl riven parmesan
    ½ dl pinjenötter eller blötlagda cashew nötter

    Do this:
    1. Om du gör peston själv, mixa alla ingredienser till peston i en stavmixer. Om du köper färdig pesto, blanda med en mogen avokado i en skål.
    2. Koka ärtorna i 1 minut. Kyl ner med kallt vatten.
    3. Salta och peppra kycklingfiléerna. Stek kycklingen i olivolja under ca. 10 minuter på medelvärme. Lägg gärna på locket efter halva tiden för att få kycklingen saftig.
    4. Häll av bönorna och häll dem i en skål. Tillsätt ärtor och pesto, blanda.
    5. Lägg upp på tallrik som på bilden. Denna rätt är lika god kall som ljummen. Nästan godare kall tycker jag, så den går att förbereda i förväg.

    Tre nyttiga ingredienser för dig som är gravid:

    Vita bönor är en viktig källa till järn, som många inte får tillräckligt av under graviditeten. Det finns också mycket fibrer i bönor som hjälper till med förstoppning vilket inte är helt ovanligt.

    Avokado innehåller folsyra som är viktigt i början av graviditeten. Avokado innehåller mycket järn som är ett bra alternativ till kött. Det innehåller även mycket mineraler, vitaminer och nyttiga fetter. Dessutom innehåller avokado kolin som är viktigt för barnets utveckling av hjärnan och nervsystem.

    Kyckling är ett magert protein med viktiga vitaminer och mineraler för dig som gravid. 100g kyckling täcker 50% av det dagliga behovet av protein för gravida. Kyckling innehåller också omega 3 och kolin som är väsentligt för fostrets hjärnutveckling.
