    Recipe for quinotto with mushrooms

    Har du testat quinotto än? Det är en variant av risotto där riset har bytts ut mot quinoa! Bortsett från att rätten blir full av näringsämnen så är den också enkel att tillaga – det tar bara 20 minuter.

    Recept på Quinotto med champinjoner

    För 2 personer
    Tillagningstid: ca 20 min

    Ingredienser
    3 dl Quinoa
    5 dl vatten
    1 kyckling- eller grönsaksbuljongtärning
    1 gul lök
    250 gram champinjoner
    1 dl matlagningsgrädde/vegetabilisk grädde
    1 dl riven parmesan
    Olivolja och smör
    Salt, peppar
    Eventuellt lite tryffelolja.

    Do this:
    1. Värm upp lite olivolja i en liten kastrull. När oljan blivit varm, tillsätt quinoan och rör om på hög värme under 1 minut. Häll i vattnet i kastrullen med quinoan och tillsätt buljongtärningen. Koka under lock på medelvärme i ca. 20 minuter

    2. Hacka löken och skär svampen i kuber. Stek löken i en stor stekpanna på medelhög värme i lite olivolja under ca. 4 minuter. Ta av löken från värmen och lägg den åt sidan på en tallrik.
    3. Stek svampen i samma stekpanna som du använde till löken. Stek på hög värme tills all vätska försvinner (ca. 3 minuter). Tillsätt olivolja och stek tills svampen är gyllenbrun, det tar ca. 5 minuter.
    4. Tillsätt löken, quinoan och grädden i stekpannan med svampen. Salta och peppra efter smak. Blanda.
    5. Toppa quinotton med riven parmesan, flingsalt och svartpeppar.
    6. Tips! Personligen älskar jag att toppa med lite tryffelolja och/eller lite god olivolja

    Tre nyttiga ingredienser för dig som är gravid:

    Quinoa är ett frö och är fullt av protein, fibrer och järn. Det innehåller bland annat kalcium och magnesium som är viktigt att få i sig under graviditeten. För dig som är vegetarian så är quinoa ett mycket bra sätt för att få i sig protein.

    Parmesan är en ost som är tillåten att äta under graviditeten. Parmesan är en bra ingrediens för att få i sig kalcium som behövs för bebisens tillväxt och skelettutveckling.

    Champinjoner är fulla av vitaminer och fibrer som hjälper mot konstipation som ofta inträffar under graviditeten. Champinjoner innehåller även järn.
